How to Make Brinjal Fry

Brinjal Fry
        Brinjal or eggplant is a popular vegetable which provides us nutrition and health benefits. It has many medicinal properties in it. It contains plenty of potassium.

         Brinjal can be made in several different ways and here is the most quick, easy and tasty Brinjal or eggplant fry recipe. It is delicious and a popular side dish in Odia         cuisine.

HOW TO MAKE BRINJAL FRY:


 INGREDIENTS:


1.  Brinjal -1(BIG)
2.  Besan- 2 tbsp
3.  Rice flour - 2 tbsp
4.  Cumin powder-1 tsp
5.  Red chilli powder-1 tsp
6.  Coriander powder-1½ tsp
7.  Turmeric powder-1 tsp
8.  Salt
9.  Mustard oil

 BRINJAL FRY RECIPE STEP BY STEP:

STEP-1: Wash the brinjal and cut it into round slices. The pieces should have equal thikness.
STEP-2: Add besan, rice flour, turmeric powder, red chilli powder, cumin powder and coriander powder in it and mix it properly so that all the pieces are well coated with spices. Rice flour will add crispiness to the dish.
STEP-3: Heat mustard oil in a tawa or frying pan. Arrange the brinjal pieces on it one by one and let it cook.
STEP-4: Turn the pieces up side down and cook till it becomes brown and crisp from both the sides.
(While cooking the flame of the gas should keep in medium to high)
STEP-5: Transfer the fried pieces to a plate and serve hot with rice as a side dish.
