Pasta in Red Sauce

Red sauce pasta or pasta in red sauce is among the most popular Italian pastas. This easy to make recipe can be quickly prepared at home using some simple ingredients.

Vegetable pasta in red sauce is a quick and delicious pasta recipe made with red sauce. It is one of the kid’s favourite recipes at home. The red sauce is made with fresh tomatoes, garlic and herbs.

Pasta in red sauce is made in three steps. First step is boiling the pasta with salt and oil. Then preparation of veggies and the third step is making the red sauce. Usually red sauce is made with tomato paste that adds colour to the pasta.

INGREDIENTS:

1. Pasta(any)-2 cups
2. Onion -1
3. Tomatoes-4 to 5(big)
4. Garlic-4 cloves(finely chopped)
5. Black pepper powder-1 tsp
6. Mixed herb-1 tsp
7. Chilli flakes-1 tsp
8. Sugar-1 tsp
9. Salt
10.    Oil
11.    Capsicum-1/2 cup
12.    Button mushroom -1/2 cup
13.    Cheese(grated)-1/2 cup
14.    Tomato sauce-1 tbsp
(You can also add any other vegetables of your choice)


METHODS FOR PREPARING RED SAUCE PASTA


STEP-1: Bring water to a boil in a large pot and salt and 1 tsp oil. When the water begins to boil, add pasta and let it cook. Stir it occasionally. Otherwise the pasta will stick to the surface of the pot.
STEP-2: When the pasta cooked properly drain it and keep aside.

STEP-3: Heat oil in a pan. Add chopped onions and all chopped veggies and saute. Do not overcook the veggies. Fry the veggies on high flame for 2 to 3 minutes.

STEP-4: FOR MAKING TOMATO SAUCE OR RED SAUCE:

·        Boil the tomatoes. (Put the tomatoes in boiling water for 2 minutes)
·         Peel the skin of the tomatoes and make a puree out of it.
·         Heat oil in a pan. Add chopped garlic and saute.
·        Add tomato puree, salt, sugar, chilli flakes, pepper powder and mixed herb.
·        Cook the tomatoes till it thicken.Now red sauce is ready to use.

STEP-5: Now in a big kadhai take red sauce and boil it. Add fried veggies, boiled pasta and mix well. Let it simmer for one minute.

STEP-6: Garnish with grated cheese, mixed herbs and chilli flakes and serve hot.

HOW TO MAKE PASTA IN RED SAUCE WITH STEP BY STEP PHOTO

STEP-1: Take water in a kadhai.

STEP-2: Add salt and oil in the water and let it boil.

STEP-3: Add pasta in it. Let the pasta boil till it becomes soft.

STEP-4: Drain the cooked pasta.

STEP-5: Chop the vegetables into small cubes.

STEP-6: Heat oil in a pan.

STEP-7: Once it is hot enough, add the chopped onions.

STEP-8: Add all the other vegetables and saute for a while. Keep them aside.

STEP-9: Heat oil in the same pan and add the chopped garlic.

STEP-10: When garlic becomes brown add tomato puree.

STEP-11: Then add chilli flakes, mixed herbs in it and mix well.

STEP-12: Add black pepper powder and mix well.

STEP-13: Finally add 1tbsp tomato ketchup and let it simmer for 5 minutes.

STEP-14: After 5 minutes you can see the sauce has become thicken and cooked. Now add boiled pasta and mix well.

STEP-15: Add chilli flakes and mixed herbs for garnishing.

STEP-16: Add grated cheese and mix well. Let it cook for 1 minute.

STEP-17: Transfer to a plate and serve hot.

Poha Cutlet

                  Poha cutlet is a cutlet or a patty which is made from beaten rice or flattened rice or poha with besan or boiled potato and other ingredients (Here I have used besan in stead of boiled potato for binding). This cutlet is ideal for breakfast, evening snack, party starter and kids’ snack.

                Poha or flattened rice is an ingredient that is easily available in every household and it can be used in many ways. Making cutlets with them is a novel way of using them.

               Poha cutlet is an easy and tasty snack. It is easiest recipe to prepare compared to other cutlets and it is healthy and nutrient snack compared to others.

INGREDIENTS:
1. Poha -2 cups
2. Besan-6 to 8 tbsp
3. Suji-2 tbsp
4. Tomatoes-2(Medium)
5. Onion-1(Big)
6. Green Chilli-4 to 5
7. Coriander Leaves-1/2 Cup
8. Mint Leaves-2 to 3 tbsp
9. Salt
10.    Oil
11.    Cumin Powder-1 tsp
12.    Red Chilli Powder-1 tsp
13.    Black Pepper Powder-1/2 tsp
14.    Lemon Juice-1 tbsp

HOW TO MAKE POHA CUTLET:

STEP-1: Chop onion, tomatoes, green chilli, ginger, coriander leaves and mint leaves and keep aside.Take poha in a bowl and wash it properly. Drain the poha and dry it completely.

STEP-2: Add the poha in a bowl with besan, suji, chopped onion, chopped tomatoes, chopped green chillies, chopped coriander leaves and chopped mint leaves.

STEP-3: Then add all spices and salt in it. Add lemon juice and mix it well. Mix the mixture by using hand. While mixing, apply a little pressure and it will form into a dough shape.

STEP-4: Now take a small amount of the dough in your hands and give it a shape of your choice.

STEP-5: Once you have made the all cutlets, heat little oil in a tawa or fry pan. Once the oil is hot, arrange the raw cutlets on the tawa or pan.let it cook for 1 to 2 mins.

STEP-6: After 1 min turn the cutlets up side down and fry the cutlets till it becomes brown from both side.

STEP-7: Transfer the cutlets into a plate and serve hot with chutney or tomato ketchup.
