                    CHICKEN 65 is a spicy, deep-fried chicken dish originated from hotel Buhari, Chennai as an entrée or a quick snack. It has become a popular appetizer in most of the restaurants in south India as well as all over India.

                   CHICKEN 65 is a delicious, spicy and hot south Indian style boneless chicken starter. This immensely popular dish is made with marinating and fried chicken bites coated with flour, curry leaves and spices. There are many variations to this dish. Curry leaves and garlic are the key ingredients in this recipe.

                   CHICKEN 65 is a quick and easy chicken recipe to make and it is a perfect restaurant style starter. You do not need to rush the restaurant anymore if you have all the ingredients at home for the lovely party appetizer.

INGREDIENTS FOR CHICKEN 65 RECIPE:


1.         Boneless chicken- 500 grams
2.         Ginger-garlic paste – 1 tbsp
3.         Salt
4.         Kashmiri red chili powder – 1 tsp
5.         Red chili powder – 1 tsp
6.         Garam masala – ½ tsp
7.         Turmeric powder – ½ tsp
8.         Black pepper powder – 1 tsp
9.         Lemon juice – 2 tbsp
10.     Soy sauce – 1 tsp
11.     Corn flour – 2 tbsp
12.     Maida or refined flour – 2 tbsp
13.     Egg -1
14.     Oil for deep-frying

For tempering:


1. Oil – 2 tsp
2. Chopped garlic – 2 tbsp
3. Curry leaves – 2 tbsp
4. Green chili – 3 to 4
5. Chili – garlic sauce – 1 tbsp


Prepation for chicken 65 recipe:


1.       Clean the chicken pieces properly and put the chicken in a big bowl.


2.        For marination add salt, chili powder, Kashmiri chili powder, turmeric powder, black pepper powder, garam masala, ginger garlic paste, soy sauce and lemon juice. Mix very well and keep it aside for at least 30 minutes for marination.



3.       Now add corn flour, refined flour and egg and mix well.



4.        Mix well.

5. Chop garlic and green chili.

How to make chicken 65 recipe:

1.      Heat oil in a kadhai or pan for deep-frying the marinated chicken pieces.

2.      Now add the marinated chicken pieces in the hot oil one by one.

3.      Fry the chicken pieces until it cooked properly and become golden brown in colour.


4.      Fry all chicken in batches and keep on a plate.

5.      Again, heat 2 tbsp oil in a pan and add chopped garlic in it. Saute for a while.

6.      Add curry leaves and green chili and saute.

7.      Add chili garlic sauce.

8.      Add fried chicken in the sauce and toss it nicely until all the ingredients coated on chicken pieces.

9.      Chicken 65 is ready to serve. Serve hot as starter, appetizer or as a snack any time of the day.

Chicken bhuna masala or bhuna chicken recipe is a famous Indian chicken dish which is popular all around the world.


         Chicken bhuna masala is a “dry curry”, which means the masala clings on to the chicken. 

          Chicken bhuna masala or bhuna chicken is a simple and delicious chicken recipe which is sauteed well in chopped onions, chopped tomatoes and curd till it slowly cooked to get that saucy gravy. Extra water is not needed for gravy in this recipe. Thick gravy comes out from the moisture of tomatoes and curd.

INGREDIENTS:

·        Chicken-1 kg
·        Onion-4 to 5
·        Tomatoes-3
·        Curd-1/2 cup
·        Ginger –garlic paste-2 tbsp
·        Red chili-4 to 5
·        Coriander powder-2 ½ tsp
·        Kashmiri red chili powder-2 ½ tsp
·        Cumin powder-1 tsp
·        Turmeric powder-1 tsp
·        Garam masala-1 tsp
·        Kasoori methi -2 tsp
·        Cream-2 tsp
·        Chopped coriander leaves-2 tbsp

 

METHODS FOR PREPARING CHICKEN BHUNA MASALA


1. Wash chicken and keep aside. Chop onions and tomatoes. Make ginger garlic paste.
2. Heat 4 to5 tbsp oil in a kadhai. Add whole garam masala in it. Add cumin seeds and let it splutter.
3. Add ginger garlic paste and fry for 2 minutes till the raw smell of ginger garlic disappears. Then add chopped onions and saute. Fry the onion till it slightly changes its colour.
4. Add red chillies and chopped tomatoes and fry for a minute. Then add chicken and fry it with onion and tomatoes for 2 minutes.
5. Add coriander powder, cumin powder, red chili powder and turmeric power and mix well. Cover the lid and let it cook for 10 to 12 minutes with low to medium flame.
6. After 12 minutes remove the lid and stir. Add curd in it and mix well. Again cover the lid and let it cook for another 10 minutes. The chicken pieces will cook with the moisture of curd and tomatoes. Water is not required to add.
7. After 10 minutes remove the lid and check the chicken whether it cooked properly or not. If it is not cooked then let it cook for another 5 minutes.
8. Remove the lid and saute the chicken. Now add kasoori methi and mix well. Chicken bhuna masala is ready now.
9. At last add little cream. Garnish with chopped coriander leaves and serve hot.

STEP-9: Cover lid on the kadhai and let it cook for 10 to 12 minutes.

STEP-10:  after 10 minutes remove the lid and add curd. Mix it well.

                KADAI CHICKEN OR KADHAI CHICKEN OR KARAI CHICKEN is a popular, easy and flavorful north Indian chicken recipe that is offered in restaurant. This recipe is primarily famous due to its delicious taste and use of a number of Indian spices.

                 Kadai chicken or kadhai chicken is a delicious and simple spicy dish and is traditionally made in a wok or kadhai. There are different ways a kadai chicken is made in India. Kadai chicken can be served with any rice based dishes, roti, naan or chapati.


INGREDIENTS:


INGREDIENTS FOR MARINATION OF THE CHICKEN:

1. Chicken-1 kg
2. Curd-3 tbsp
3. Ginger-garlic paste-2 tbsp
4. Salt
5. Kashmiri chilli powder-2 tsp
6. Garam masala-1 tsp
7. Turmeric powder-1/2 tsp

INGREDIENTS FOR COOKING:

1. Onion-3(big)
2. Tomatoes-2(medium)
3. Tomato puree-2tbsp
4. Ginger-1inch
5. Garlic-5to6 cloves
6. Cumin seeds-1/2tsp
7. Clove-2to3
8. Cinnamon-2to3pieces
9. Green cardamom-2
10. Red chillies-2to3
11. Green chillies-2to3
12. Pepper powder-1/2tsp
13. Garam masala -1/2 tsp
14. Coriander powder-2tsp
15. Cumin powder-1tsp
16. Turmeric powder-1/2tsp
17. Curd-2tbsp
18. Cream -2tbsp

INGREDIENTS FOR GARNISHING:

1. Chopped coriander leaves
2. Cream

METHODS FOR PREPARING KADHAI CHICKEN:


STEP-1: Wash the chicken and marinate it with curd, red chilli powder, salt, ginger-garlic paste, turmeric powder and garam masala. Keep it aside for 30 minutes.
STEP-2: Chop two onion and ginger- garlic. Make a paste out of it.
STEP-3: Cut capsicum and another one onion into big cubes. Chop tomatoes.
STEP-4: After 30 minutes, heat oil in a kadhai and add marinated chicken. Saute it 1 minute on high flame and then reduce the flame to low. Cover the chicken with a lid and cook till the chicken becomes dry and the colour of the chicken has changed.
STEP-5: Transfer the fried chicken to a plate and keep aside. Now heat 3 to 4 tbsp oil in a kadhai and add cumin seeds, cloves, cardamom and cinnamon. Let it crackle.
STEP-6: Then add the onion-ginger-garlic paste and fry for 2 minues. After 2 minutes add chopped tomatoes and tomato puree and cook it by covering with the lid till the tomatoes become soft and mushy.
STEP-7: Now add coriander powder, cumin powder, turmeric powder and little Kashmiri red chilli powder for colour. Saute till the masala cooked well.
STEP-8: Add curd and fry the masala for a while. Then add cream and fry the masala again till the oil can be seen on the surface of the kadhai.
STEP-9: Add cubed onion and capsicum and mix well. Then add fried chicken and mix well. Add ½ cup water and cover the lid on. Let it cook for 10 to 15 minute till the chicken cooked properly.
STEP-10: Remove the lid and check the chicken. If it is done then add pepper powder and garam masala and mix well. Cook for another 5 minutes.
STEP-11: Add chopped coriander leaves and mix well.Now kadhai chicken is ready to serve. Transfer it to a serving bowl.
STEP-12: Garnish it with cooking cream and chopped coriander leaves. Serve hot with roti or any Indian breads or rice.


HOW TO MAKE KARAHI CHICKEN OR KADAI CHICKEN WITH STEP BY STEP PHOTO

STEP-1: WASH the chicken properly.

STEP-2: Marinate the chicken with curd, ginger-garlic paste,  salt, red chilli powder and garam masala.

STEP-3: Make a paste using two onions, ginger and garlic.

STEP-4: Cut capsicum and one onion into cubes.

STEP-5: Mix the chicken well with masala and keep aside for 30 minutes.

STEP-6: After 30 minutes, heat oil in a karahi or kadai.

STEP-7: Add marinated chicken in the oil and saute.

STEP-8: Cover the lid and cook the chicken till it become fried.

STEP-9: Keep the fried chicken in a plate.

STEP-10: Now heat 3 to 4 tbsp oil in the same kadai.

STEP-11: Add cumin seeds, clove, cinnamon and green cardamom in  the oil. Let it splutter.

STEP-12: Add onion-ginger-garlic paste and saute for a while.

STEP-13: Then add chopped tomatoes and tomato puree together and stir.


STEP-14: Cover the lid and let it cook till the tomatoes become soft and mushy.

STEP-15: Add coriander powder, cumin powder, haldi, red chilli powder and slit green chillies.


STEP-16: Fry the masala well.

STEP-17: Add required amount of salt and fry the masala.

STEP-18: Add half of chopped coriander leaves (another half will be used later).

STEP-19: Then add curd and mix well.

STEP-20: Now add cream and stir continuously.

STEP-21: Now the masala become creamy and properly cooked.

STEP-26: Remove the lid and add pepper powder and garam masala.
