ODIA STYLE EGG AND POTATO CURRY
Odia style egg and
potato curry is a quick, simple and delicious recipe made using boiled potatoes
and boiled eggs cooks in a gravy rich in spices. This egg curry is a very easy
to make and requires very less ingredients. It is a delicious option for lunch
and dinner. This recipe goes well with roti, rice, paratha, naan and kulcha
etc.
This recipe is an easy
recipe for beginners. Here I have given the cooking process of this recipe step
by step.
INGREDIENTS:
Ingredients for odia style egg
and potato curry are as follows:

Egg – 4

Potato- 3

Onion-1(medium)
4.
Tomatoes-2(small)
5.
Ginger garlic paste-1 tbsp
6.
Red chilli-2
7.
Green chilli-2
8.
Red chilli powder-1tsp
9.
Jeera powder-1tsp
10.
Coriander powder-2 tsp
11.
Garam masala-1tsp
12.
Haldi-1tsp
13.
Coriander leaves(chopped)
14.
Mustard Oil- 3 tbsp or as required
HOW
TO PREPARE EGG AND POTATO CURRY
STEP-1- Boil eggs and potatoes and let them cool completely. Then peel the potatoes and remove shells from eggs. Cut each potato into 4 pieces.
STEP-2- Heat a pan with 1 tsp mustard oil
and add pinch of salt, haldi and red chilli. Add eggs and fry them till they
turn brown. Transfer the fried eggs into a plate. Use the same pan to fry the
potato pieces. Keep the fried pieces aside.
STEP-3- In
the same pan add 2 tbsp mustard oil and add some cumin seeds in it. When cumin
seeds splutter add slit green chilli and chopped onions and saute it till it
turns brown.
STEP-4- Add ginger-garlic paste and cook
till the raw smell of masala is gone. Then add dry spices like haldi powder, cumin
powder, coriander powder and red chilli powder and mix it well for 2 to 3 mins.
STEP-5-
Then add tomatoes and red
chilli paste and cook the mixture till the oil comes out. After that add fried
potatoes and saute for a while.
STEP-6-Add required amount of
water in it and bring it to a boil by keeping the lid on.
STEP-7-Add fried eggs in it
and cook it for a couple of minutes.
STEP-8-Add garam masala and garnish with coriander leaves. Serve hot with rice, roti, naan
or paratha.
