KADAI
CHICKEN OR KADHAI CHICKEN OR KARAI CHICKEN is a popular, easy and flavorful north Indian chicken recipe that is offered in restaurant. This
recipe is primarily famous due to its delicious taste and use of a number of
Indian spices.
Kadai
chicken or kadhai chicken is a delicious and simple spicy dish and is
traditionally made in a wok or kadhai. There are different ways a kadai chicken
is made in India. Kadai chicken can be served with any rice based dishes, roti, naan
or chapati.
INGREDIENTS:
INGREDIENTS FOR MARINATION OF THE CHICKEN:
1. Chicken-1 kg
2. Curd-3 tbsp
3. Ginger-garlic paste-2 tbsp
4. Salt
5. Kashmiri chilli powder-2 tsp
6. Garam masala-1 tsp
7. Turmeric powder-1/2 tsp

1. Onion-3(big)
2. Tomatoes-2(medium)
3. Tomato
puree-2tbsp
4. Ginger-1inch
5. Garlic-5to6
cloves
6. Cumin
seeds-1/2tsp
7. Clove-2to3
8. Cinnamon-2to3pieces
9. Green
cardamom-2
10. Red
chillies-2to3
11. Green
chillies-2to3
12. Pepper
powder-1/2tsp
13. Garam
masala -1/2 tsp
14. Coriander
powder-2tsp
15. Cumin
powder-1tsp
16. Turmeric
powder-1/2tsp
17. Curd-2tbsp
18. Cream
-2tbsp

1. Chopped coriander leaves

METHODS FOR PREPARING KADHAI CHICKEN:
STEP-1: Wash the chicken and marinate it
with curd, red chilli powder, salt, ginger-garlic paste, turmeric powder and
garam masala. Keep it aside for 30 minutes.
STEP-2:
Chop two onion and ginger- garlic. Make
a paste out of it.
STEP-3:
Cut capsicum and
another one onion into big cubes. Chop tomatoes.
STEP-4:
After 30 minutes, heat
oil in a kadhai and add marinated chicken. Saute it 1 minute on high flame and
then reduce the flame to low. Cover the chicken with a lid and cook till the
chicken becomes dry and the colour of the chicken has changed.
STEP-5: Transfer the fried chicken to a
plate and keep aside. Now heat 3 to 4 tbsp oil in a kadhai and add cumin seeds,
cloves, cardamom and cinnamon. Let it crackle.
STEP-6:
Then add the onion-ginger-garlic paste and fry for 2 minues. After 2 minutes
add chopped tomatoes and tomato puree and cook it by covering with the lid till
the tomatoes become soft and mushy.
STEP-7:
Now add coriander
powder, cumin powder, turmeric powder and little Kashmiri red chilli powder for
colour. Saute till the masala cooked well.
STEP-8: Add
curd and fry the masala for a while. Then add cream and fry the masala again
till the oil can be seen on the surface of the kadhai.
STEP-9:
Add cubed
onion and capsicum and mix well. Then add fried chicken and mix well. Add ½ cup
water and cover the lid on. Let it cook for 10 to 15 minute till the chicken
cooked properly.
STEP-10:
Remove the lid and
check the chicken. If it is done then add pepper powder and garam masala and mix
well. Cook for another 5 minutes.
STEP-11:
Add chopped coriander
leaves and mix well.Now kadhai chicken is ready to serve. Transfer it to a
serving bowl.
STEP-12:
Garnish it with
cooking cream and chopped coriander leaves. Serve hot with roti or any Indian
breads or rice.
HOW TO MAKE KARAHI
CHICKEN OR KADAI CHICKEN WITH STEP BY STEP PHOTO
STEP-1: WASH the chicken properly.
STEP-2: Marinate the chicken with curd,
ginger-garlic paste, salt, red chilli
powder and garam masala.
STEP-3: Make a paste using two onions,
ginger and garlic.
STEP-4: Cut capsicum and one onion into
cubes.
STEP-6: After 30 minutes, heat oil in a
karahi or kadai.
STEP-7: Add marinated chicken in the oil and saute.
STEP-8: Cover the lid and cook the
chicken till it become fried.
STEP-9: Keep the fried chicken in a
plate.
STEP-10: Now heat 3 to 4 tbsp oil in the
same kadai.
STEP-11: Add cumin seeds, clove, cinnamon
and green cardamom in the oil. Let it splutter.
STEP-12: Add onion-ginger-garlic paste and
saute for a while.
STEP-13: Then add chopped tomatoes and
tomato puree together and stir.
STEP-14: Cover the lid and let it cook
till the tomatoes become soft and mushy.
STEP-15: Add coriander powder, cumin
powder, haldi, red chilli powder and slit green chillies.
STEP-16: Fry the masala well.
STEP-17: Add required amount of salt and
fry the masala.
STEP-18: Add half of chopped coriander leaves
(another half will be used later).
STEP-19: Then add curd and mix well.
STEP-20: Now add cream and stir
continuously.
STEP-21: Now the masala become creamy and
properly cooked.
STEP-22: Now add cubed onion and capsicum
and stir.
STEP-23: Add fried chicken and mix well.
STEP-24: Add ½ cup water.
STEP-25: Cover the lid and cook for 5
minutes.
STEP-26: Remove the lid and add pepper
powder and garam masala.
STEP-27: Add chopped coriander leaves and
mix well.
STEP-28: Cook the chicken for one minute.
STEP-29: Transfer chicken to a serving
dish and garnish with cream and little chopped coriander leaves.
