METHI PARATHA RECIPE
Paratha
or flatbreads are very common in Indian cuisine and are traditionlly eaten as
breakfast. Methi paratha is a very popular variant of it during winter.
Methi
is well known for its nutritional qualities.It is rich in calcium, iron, magnesium
and many other minerals.It is a good source of dietary fibers, anti-oxidants
and it also keeps blood sugar in control.
Methi
paratha is a delicious and healthy Indian flatbread made from mildly spices
whole wheat flour combined with fresh fenugreek leaves. It is one of the
healthiest flat breads from Indian cuisine often made for breakfast or meal.
Methi
parathas are usually eaten with curd or raita or pickle or coriander chutney.
Methi
paratha is usually made with only wheat flour, but in my recipe I use chickpea
flour or besan with wheat flour for increasing the crispiness of the paratha.
INGREDIENTS:
1. Wheat flour-2cups
2. Besan- ½ cup
3. Fresh fenugreek leaves(methi)-2
cups
4. Onion-1
5. Green chili-3to4
6. Grated ginger-2tsp
7. Carom(ajwain) seeds-1tsp
8. Cumin powder-1/2 tsp
9. Turmeric powder-1/2 tsp
10. Oil
11. Lemon juice-1tbsp(OPTIONAL)
12. Salt
METHODS FOR PREPARING METHI PARATHA:
HOW TO MAKE DOUGH FOR METHI PARATHA:
1. Clean methi leaves well and drain
them completely.
2. Chop the methi leaves and keep
aside.
3. Chop onion and green chilies.
4. In a big bowl or parat mix wheat
flour, besan and salt.
5. Then add chopped onions, chopped
green chilies and grated ginger and mix well.
6. Now add all dry masalas like
turmeric powder, cumin powder, carom seeds, garam masala, lemon juice and 2
tbsp oil.
7. Mix all ingredients well. Adding water,
knead the flours and masalas mix and make a soft dough out of this. Keep the dough
for rest for 15 minutes.
HOW TO ROLL METHI PARATHA:
1. Make medium size ball out of the
dough.
2. Take one ball and dust it with
some dry flour.
3. Start rollig the methi paratha by
using rolling pin.
4. Roll the ball into a medium size
round roti.
HOW TO MAKE METHI PARATHA:
1. Heat a tawa or griddle and place
the paratha on it.
2. When it cooked a bit, flip the
paratha.
3. Apply some ghee or oil on upper
part of paratha.
4. Flip the paratha and apply ghee on
the other side.
5. Flip the paratha till it cooked
evenly and has brown spot on it.
6. Cooked the paratha by pressing it
with a spatula so that it will cook evenly.
7. Repeat the steps for making other
parathas and serve it with curd or pickle or chutney.
HOW TO MAKE METHI PARATHA WITH STEP BY STEP PHOTO
STEP-1:
Clean methi leaves properly and chop it.
STEP-2:
Chop onion and green chilies.
STEP-3:
Mix wheat flour, besan and salt in a large bowl.
STEP-4:
Add chopped fenugreek leaves (methi), chopped onions, chopped green chilies and
grated ginger.
STEP-5:
Add carom seeds, turmeric powder, cumin powder, garam masala and oil in it.
STEP-6:
Knead it to a soft dough.
STEP-7:
cover it and keep for 15 minutes.
STEP-8:
After 15 minutes knead it again.
STEP-9:
make medium size balls out of it.
STEP-10:
Take one ball and dust it with dry flour.
STEP-11:
start rolling the paratha.
STEP-12:
Make a round shaped roti out of it.
STEP-13:
Heat a tawa and place the paratha on it.
STEP-14:
When the paratha cooked from one side flip it.
STEP-15:
Apply some ghee or oil on the paratha.
STEP-16:
Flip the paratha again and apply ghee or oil on this side too.
STEP-17:
Flip the paratha a couple of time till it cooked properly.
STEP-18:
Transfer the paratha to a plate.
STEP-19:
Make other parathas with the same process and serve hot.
