BAINGAN KA
BHARTA OR ROASTED MASHED BRINJAL DISH OR EGGPLANT DISH is a easy, simple and tasty North
Indian dish made with eggplant or baingan , onion, tomatoes,garlic and a few
spices. In this recipe brinjals are roasted on an open flame, mashed and mixed
along with chopped onions, tomatoes, garlic, green chilies and other spices. The
mouthwatering smokey flavour that comes from roasting the brinjal on open flame
is makes the dish flavourful and delicious.
BAINGAN KA BHARTA is a delicious and most popular
dish in India. Different versions of this popular dish are made in several
states across this country. But the recipe I have shared here is the most
common way and the one you will find in restaurants.
Though
BAINGAN KA BHARTA is a simple and easy to make
recipe, but there are a few things which should be taken care of to make a
perfect bharta. Most important thing here is picking up right type of baingan. For
making tasty and perfect baingan bharta choose a brinjal which is large and
round shaped. It should be light weight so that it has more flesh and fewer
seeds. While roasting baingan, brush little oil over the surface of the baingan
or brinjal so that the skin of the roasted baingan comes out easily.
INGREDIENTS FOR BAINGAN BHARTA:
1. Large baingan or eggplant-2
2. Onion-1
3. Tomato-1(big)
4. Green peas – ½ cup
5. Garlic -5 to 6 cloves
6. Green chili – 2 to3
7. Red chili powder- ½ tsp
8. Garam masala – ½ tsp
9. Coriander powder- 1 tsp
10. Turmeric powder- ½ tsp
11. Salt
12. Oil
13. Chopped coriander leaves – 2 tbsp
HOW TO MAKE BAINGAN
BHARTA:
STEP-1:
HOW TO ROAST BAINGAN: Make slit in baingan or eggplant and
check if any insects are inside the baingan. Apply some oil on surface of the
baingan or eggplant by using brush so that the skin of the baingan can be
removed easily after roasting. Roast the baingan on an open flame by turning
the baingan every 1 to 2 minutes. Roast the baingan for 8 to 10 minutes or till
it roasted well on all sides.
STEP-2:
HOW
TO PEEL THE ROASTED BAINGAN:
Once the baingan is
roasted; keep aside to cool for a few minutes. Then wash the roasted baingan
and peel it. Remove skin from roasted baingan and mash it by using a potato
masher.
STEP-3:
HOW
TO COOK BAINGAN BHARTA:
Chop onion, tomato,
green chilies and garlic. Peel green peas. Heat oil in a pan or kadhai and add chopped
garlic in it. Saute for a while. Add chopped green chilies and chopped onions. Fry
it till it slightly changed its color. Add green peas and fry. Add chopped
tomatoes and cook till the tomatoes are soft. Add criander powder, red chili
powder and turmeric powder and stir. Add mash baingan and mix well. Add salt
and cover the pan. Let it cook for 4 to 5 minutes on low flame. After that
remove the cover and add garam masala and chopped coriander leaves. Mix well
and serve hot.

STEP-1: Make
slit on brinjal or baingan.
STEP-2: Brush
it with little oil all over.
STEP-3: Put
the baingan on a stand and put the stand on flame and roaste it.
STEP-4: Turn
the baingan often and roast it for 8 to 10 minutes or till it completely
roasted.
STEP-5: Once
it rosted keep it for cooling for few minutes.
STEP-6: Once
it completely cool, peel and mash it.
STEP-7: Chop
onion, tomato, green chilies and garlic. Peel green peas.
STEP-8:
Heat oil in a pan or
kadhai.
STEP-9: Add chopped garlic and green
chilies.
STEP-10: When garlic became brown add
chopped onions and saute for a while.
STEP-11: Add green peas and fry till it
soft.
STEP-12: Now add chopped tomatoes and cook
till it becomes soft.
STEP-13: Add mashed baingan or eggplant
and mix well.
STEP-14: Add dry masalas and mix well.
STEP-15: Cover the kadhai and let it cook
for 5 minutes.
STEP-16: After 5 minutes remove the lid
and add garam masala and chopped coriander leaves.
STEP-17: Mix well and serve hot with roti
or parantha.
