KI SABZI OR BOTTLE GOURD CURRY is
a recipe that is simple, tasty and nutritious. This recipe is a very light and
healthy recipe. It is a traditional recipe of India.
LAUKI
OR BOTTLE GOURD (is
also called ghiya or dhudhi) is a versatile vegetables that can be prepared in
many ways. It is used in preparing variety of savory and sweet dishes. Lauki is
often combined with various lentiles to make dishes in Indian cooking.
Lauki
or ghiya or bottle gourd has always been regarded as one of the healthiest
veggies. It is full of water and minerals and keeps your body hydrated. It
helps in maintaining a healthy heart and bringing down bad cholesterol levels.
Lauki juice is beneficial for stabilising blood sugar level and maintains blood
pressure. It is also beneficial for weight loss.
INGREDIENTS
FOR LAUKI KI SABZI:

Lauki
or bottle gourd – 1 kg
·
Onion-1(big)
·
Tomatoes-2
·
Ginger-garlic
paste-1tbsp
·
Red
chilies-3 to 4
·
Bay
leaves-2
·
Cloves,
illaichi and dalchini -2(each)
·
Coriander
powder-1tsp
·
Cumin
powder- ½ tsp
·
Red
chili powder-1tsp
·
Turmeric
powder- ½ tsp
·
Garam
masala- ½ tsp
·
Chopped
coriander leaves – 2tbsp
·
Salt
·

METHODS
OF MAKING LAUKI KI SUBJI:
1. Peel and wash lauki. Cut it into
1inch pieces. Wash the lauki pieces and
keep it aside.
2. Chop onion and tomatoes. Make
ginger-garlic paste.
3. Take a pressure cooker and put
lauki pieces, salt and turmeric powder in it. Close the lid and cook iton
medium flame till one whistle comes.
4. Remove the cooker from flame after one whistle
and cool it completely. Open the lid and keep aside.
5. Heat 2tbsp oil in a kadhai and add
cumin seeds in it. Let the cumin seeds crackle. Add cloves, bay leaves, green
cardamom and cinnamon in it.
6. Add chopped onion and saute for a
while. Add red chilies and saute.Then add ginger-garlic paste and tomato paste
and fry it till it became fried properly.
7. Now add dry masalas like,
coriander powder, cumin powder, red chili powder, turmeric powder and garam
masala.
8. Fry the masala till it leaves oil
from surface. Add boiled lauki and mix well with masala.
9. Let it simmer for 5 to 6 minutes.
Garnish with chopped coriander leaves and serve hot with roti or chapati.
