INSTANT KHAMAN DHOKLA RECIPE/ INSTANT BESAN DHOKLA/ DHOKLA RECIPE
INSTANT KHAMAN DHOKLA OR INSTANT DHOKLA is a mouth-watering, nutritious and irresistable steam cake prepared with besan or chickpea flour and spices. It is a healthy Gujarati snack made with very less oil.
Instant
besan dhokla is a simple and quick recipe. It is a combination of sweet and sour
taste, which is generally served as a snack but can also be served as
breakfast.
Traditional
dhokla needs to ferment for several hours or over night which is time consuming
and requires a lot of planning and preparation in advance. But there are many
instant version of dhokla in which we can ferment artificially. Here I have used
Eno fruit salt for artificial fermentation within a minute.
INGREDIENTS:
1. Besan-2cups
2. Rava or suji-2 tbsp
3. Curd-2 tbsp
4. Lemon juice-2 tbsp
5. Salt
6. Ginger-green chilies paste-2 tbsp
7. Turmeric powder-1/2 tsp
8. Oil-2 tsp
9. Eno fruit salt-2 tbsp
10. Sugar-1 tsp
FOR TADKA OR FOR TEMPERING:
1. Oil-1 tbsp
2. Mustard seeds-1 tsp
3. Curry leaves-2 tbsp
4. Green chilies-4 to 5
5. Lemon juice-2 tbsp
6. Sugar-2 tbsp (as per your taste)
METHODS FOR PREPARING
INSTANT DHOKLA:
1. Take 2 cups besan and 2 tbsp suji
or rava and strain it in a big bowl.
2. Add 2 tbsp curd, turmeric powder,
salt, and sugar in it. Then add oil, freshly ground ginger and green chili paste and water and mix
it to make a batter.
3. Cover the batter and keep it for
15 minutes.
4. In the mean time, take a steamer or
kadhai and pour 2 glasses of water in it. Keep a stand in the water if you are
using kadhai. Let the water boil.
5. Grease a cake mould or bowl in
which you will steam the dhokla; so that dhokla will come out smoothly after cooking.
6. After 15 minutes mix well the
batter and mix Eno fruit salt in the batter and mix well. Pour the batter in
the greased bowl immediately.
7. Keep the bowl on the stand of the
steamer or kadhai and cover the lid. Cook it for 10 minutes.
8. After 10 minutes check the dhokla
if it cooked properly by inserting a knife or toothpick in it. It should come
out clean.
9. Allow it to cool down. Loosen up the edges of
the dhokla and flip it on a plate.
10. Cut the dhokla into pieces by
using a knife. Now soft and yummy dhokla is ready for tempering.
INSTRUCTIONS FOR TEMPERING:
1. Heat a tadka pan and add 1 tbsp oil
in it. When oil became hot add mustard seeds and let them splutter.
2. Add slit green chilies and curry
leaves in it and saute.
3. Now add 1 cup water and let it boil. In boiling
water add 2 tbsp sugar and mix. Let it boil for a while. Add lemon juice and
turn off the flame.
4. Pour the tempering over steamed
dhokla. Delicious instant dhokla is ready. Serve the Gujarati snack with chutney
of your choice.
HOW TO MAKE INSTANT BESAN DHOKLA WITH STEP BY STEP PHOTO:
STEP-2: Sieve it in a big bowl.
STEP-3: Add 2 tbsp curd, turmeric powder,
salt, and sugar init.
STEP-4: Then add freshly ground ginger
and green chili.
STEP-5: Add water and mix it to make a batter.
STEP-6: Add 1 tbsp oil and mix well.
STEP-7: Cover
the batter and keep it for 15 minutes.
STEP-8: Take
a kadhai and pour 2 glasses of water in it. Keep a stand in the water.
STEP-9:
Let the water boil.
STEP-10: Grease
a cake mould or bowl in which you will make dhokla, so that dhokla will come
out smoothly after cooking.
STEP-11: After
15 minutes mix well the batter.
STEP-12: Mix Eno fruit salt in the batter and mix well.
STEP-13: Pour
the batter in the greased bowl immediately.
STEP-14:
Keep the bowl on the stand of the steamer or kadhai and cover the lid.
STEP-15:
Let it cook for 10 minutes.
STEP-16: After
10 minutes check the dhokla if it cooked properly by inserting a knife or toothpick
in it. It should come out clean.
STEP-17: Allow
it to cool down. Loosen up the edges of the dhokla.
STEP-18: Flip
it on a plate.
STEP-19: Cut
the dhokla into pieces by using a knife. Now soft and delicious snack is ready
for tempering.
FOR
TEMPERING:
STEP-2: Add
mustard seeds and let it crackle.
STEP-3: Add
slit green chilies.
STEP-4: Add
curry leaves and saute.
STEP-5: Add
water and sugar and lemon juice. Mix it well.
STEP-6: Let the water boil for a while.
STEP-7: Pour
the tadka or tempering over the dhokla and serve hot with chutney.
