MIXED VEGETABLE CURRY OR RESTAURANT STYLE MIXED VEGETABLE CURRY

                                 MIXED VEGETABLE CURRY OR MIXED VEG. CURRY is often made in Indian household. It is an all time favourite recipe, which is simple and easy to make. There are so many different ways to make mixed veg. curry. Some make it dry and but it can be made with gravy also. People use vegetables of their choice to make this dish. So, it always tastes different from one another.

                                

                                 In my recipe with vegetables, I have used paneer to enhance the taste of the dish. Normally, I use potato, beans, carrot, cauliflower, capsicum and peas in this recipe. How ever, you can add vegetables like baby corn, broccoli, sweet corn and mushroom. Here, I have sauteed the veggies first and then mixed with spices. You can grill or boil the veggies and then simmer in gravy for a while.



Ingredients for mixed veg. curry:

 

·        Paneer – 150 grams

·        Potato – 1( cut into small pieces)

·        Cauliflower – 1 cup (cut into small florets)

·        Beans – ½ cup ( 1 inch pieces)

·        Capsicum- 1(cut into small pieces)

·        Carrot- 1 ( cut into thick one inch pieces)

·        Peas- ½ cup (I have taken frozen, you can take fresh also)

·        Onion – 1 ( finely chopped)

·        Tomatoes – 2

·        Cashew – 6 to 7

·        Ginger-garlic paste -1tbsp

·        Curd- 3 to 4 tbsp

·        Cream – 2 tbsp ( optional)

·        Turmeric powder – ½ tsp

·        Coriander powder – 1 tsp

·        Red chili powder – 1 tsp

·        Cumin powder – ½ tsp

·        Garam masala – ½ tsp

·        Kasoori methi – 2 tsp

·        Cumin seeds – ½ tsp

·        Bay leaves- 2

·        Cinnamon- 1 piece

·        Salt

·        oil

1.  Wash the veggies thoroughly and chop them into required size and shape.

2. Cut paneer into small pieces.

3.  Make a paste out of cashew, cinnamon, black pepper and tomatoes.

4. Heat oil in a pan and fry paneer.

5. Then add oil in the same pan again and add potatoes, carrots and beans. Saute for 2 minutes.

6. Add cauliflower and fry all veggies for 2 to 3 minutes.

7. At last, add capsicum and peas. Fry for one minute and remove the pan from flame. ( if you are using fresh peas then add it with potatoes and carrots)

8. Now for making gravy, heat oil in a kadai or pan and add cumin seeds and bay leaves in it.

9. When it crackles, add finely chopped onion and saute until it changes to golden in colour.

10.     Now add ginger – garlic paste and fry it until the raw smell of ginger and garlic goes away.

11.     Then add tomatoes and cashew paste and fry it.

12.     Add all dry masalas like turmeric powder, red chili powder, coriander powder, cumin powder and salt. Mix well.

13.     Add curd and cream and fry the masala until oil separated from masala.

14.     Add kasoori methi and garam masala and mix well.

15.     Add all fried veggies and give it a good mix.

16.     Add one- cup of water in it and mix.

17.     Cover the lid and let it cook for 5 to 8 minutes.

18.     Remove the lid and check the veggies if it cooked properly.

19.     Now add paneer and mix well.

20.     Let it simmer for one minute. Garnish with chopped coriander leaves.

21.     Transfer to a serving bowl and serve hot with roti, paratha or puree.

CHILLI PANEER OR PANEER CHILLI RECIPE is a popular indo-chinese recipe made with paneer or cottage cheese, vegetables and some sauces. It is full of tasty and crunchy vegetables, which gives a refreshing flavour to the dish.

CHILLI PANEER OR PANEER CHILLI is an easy and quick recipe; which can be prepared easily at home. It is a simple and easy recipe even for beginners. Basically, in this recipe paneer is coated with all purpose flour and corn flour with some spices and cooked with soy sauce, chili sauce, tomato ketchup and vinegar to give it spicy and tangy taste. To make the recipe healthy you can avoid using maida or all purpose flour. You can also replace corn flour with rice flour.

CHILLI PANEER OR PANEER CHILLI is a great dish for all paneer lovers. This recipe is a great option to serve as appetizer or starter for any party or get- together. It is also an easy to make snack recipe. Even the gravy version of chilli paneer can be served as a side dish in lunch and dinner.

CHILLI PANEER OR PANEER CHILLI goes well with steamed rice, fried rice, jeera rice, schezwan fried rice and hakka noodles as side dish. It can also serve with roti, paratha, naan and any Indian bread.

Ingredients for chili paneeR:

1.    Paneer – 250 grams
2.    Onion- 1
3.    Capsicum-1
4.    Garlic(chopped)- 2 tbsp
5.    Ginger (chopped)- 1 tbsp
6.    Green chilies(chopped)- 1 tbsp
7.    Ginger-garlic paste-1 tbsp
8.    Pepper powder- ½ tsp
9.    Kashmiri red chili powder – 1 tsp
10.    Chili sauce- 2 tbsp
11.    Tomato ketchup- 3 to4 tbsp
12.    Soy sauce- 1 tbsp
13.    Vinegar – 1 tbsp
14.    Corn flour- 3 to 4 tbsp
15.    Salt
16.    Oil

Instructions for making chili paneer:


1.   Cut the paneer into cubes. Add Kashmiri chili powder, salt, black pepper powder and ginger- garlic paste and mix well.

2.   Add 3 to 4 tbsp of corn flour in it and coat the paneer well with masalas and corn flour. Here you can add maida or all purpose flour, but I have not used. I do not prefer maida for health reason.

3.   Heat oil in a pan and fry the paneer until it turns light golden brown in colour.

4.   Fry the paneer in small batches. Transfer the fried paneer to a plate and keep aside.

5.   Chop onion and capsicum into cubes.

6.   Now we will make the sauce. For making sauce, heat 2 tbsp oil in same pan in which we had fried paneer pieces. Add chopped garlic and saute for a while. Add chopped ginger and green chilies and fry. After a while add onion cubes and saute.

7.   When onions become translucent, add capsicum and salt and fry for 2 minutes. Do not overcook the onion and capsicum. Keep them crunchy.

8.   Now add chili sauce, soy sauce, vinegar, and tomato ketchup in it. Add 2 tbsp water and let it gets a boil. Finally add fried paneer cubes and toss them well.

9.    If you want gravy, then make slurry out of water and corn flour and mix it in paneer and sauce mixture. Let it simmer for one minute. Garnish with spring onions or chopped coriander leaves and serve hot.

PANEER LABABDAR is a rich, creamy, delicious and flavourful North Indian recipe and mostly found on North Indian restaurant menus. Paneer lababdar is made with paneer or cottage cheese simmered in creamy onion-tomatoes and cashew based gravy. The gravy is creamy, mildly tangy and faintly sweet.


PANEER LABABDAR is a great choice for special occasions and parties. It is mainly served with naan, roti, parathas and it is also served with jeera rice or steamed rice. Paneer is a great source of protein and calcium. So it is healthy for people of all age.

To make perfect paneer lababdar one should use fresh and soft paneer. Homemade paneer are the best choice for this dish, because homemade paneer are freshly made and softer than other paneer.

In paneer lababdar instead of cream grated paneer is used to make the gravy creamy. For bringing sweet taste littlesugar is added in it which makes the dish yummy and delicious.


Ingredients for paneer lababdar

·        Paneer- 250 grams
·        Grated paneer- ½ cup
·        Onion-1
·        Tomatoes-2(medium)
·        Ginger-1 inch
·        Garlic-6 to 7 cloves
·        Cashew or kaju – 9 to 10
·        Melon seeds – 2 tbsp
·        Coriander powder-2 tsp
·        Red chili powder-1 tsp
·        Kashmiri red chili powder-2 tsp
·        Cumin powder-1 tsp
·        Turmeric powder- ½ tsp
·        Garam masala-1 tsp
·        Cumin seeds- 1 tsp
·        Clove, cinnamon and green cardamom – 2(each)
·        Salt
·        Oil
·        Butter-1 tbsp
·        Sugar-1 tsp

REPARATIONS FOR PANEER LABABDAR:


1. Cut paneer into triangle shape. (You can also cut the paneer into cubes).

2. Take 100 grams paneer and grate it.

3. Chop onion and tomatoes roughly. Peel garlic and ginger.

4. Heat one tbsp oil in a pan and add roughly chopped onion in it. Saute the onion till it becomes translucent.

 5.Add ginger and garlic and saute for a while.

 6.Now add chopped tomatoes,melon seeds and cashew and fry the all ingredients till the tomatoes became soft and mushy.

7. Let it become cool.

8. After cooling put all into a blending jar and make a puree out of it.

HOW TO MAKE PANEER LABABDAR:


1. Heat 2 tbsp oil and 1tbsp butter in a pan or kadhai. Add cumin seeds, cloves, cinnamon and green cardamom in it. Let the cumin seeds crackle.

2. Add Kashmiri red chili powder in it.

3. Add the puree we had made and stir.

4. Mix the masala for a while.

5. Add coriander powder, turmeric powder and garam masala and mix well.

6.  Add 2 tbsp water and cover the lid. Let the masala cook for 10 minutes on low flame.

7. When the masala cooked properly add ½ cup water, salt and 1 tsp sugar in it.  Let the gravy boil for a while.

8. Set the consistency of gravy and add grated paneer in it. (keep 2 tbsp grated paneer for garnishing)

9.  Now add paneer pieces and mix well.

10.  Let it simmer for 5 to 8 minutes.

11.  Add kasoori methi and mix well. Let it cook for another 5 minutes.

12.  When the gravy became thick, transfer it to a serving bowl.  Garnish the dish with remaining grated paneer and serve hot with naan, parantha or rice.
