Raw mango curry or sweet and sour raw mango curry/ odia style raw mango curry or amba khata
Green
mango curry or sweet and sour raw mango curry is a recipe liked by the people
of all age groups. This delicious recipe is prepared using ingredients like raw
or green mango, chili powder and grated jaggery. It has a sweet and tangy
flavour which brings water to your mouth. This recipe is perfect to serve as
side dish with rice or roti or paratha. The taste of raw mango curry is different
from our regular curries, so for a change you must try this mouth watering dish
and treat your taste buds.
Raw
mango curry is a summer recipe`as it available in summer. It has amazing health
benefits.Raw mango is rich in vitamin A and C, calcium, iron and magnesium. Raw
mangoes contain an acid which helps in digestions.
This
raw mango recipe, I have shared here is from odia cuisine. It is a very famous recipe
in odisha and is called “amba khata”. It is a very popular side dish with
steamed rice and dal in summer.
Ingredients for raw mango curry:
1. Green raw mango- 250 grams or 2
2. Ginger – 1 inch
3. Whole red chilies – 3 to 4
4. Curry leaves – 2 strings
5. Punch phoran ( combination of
cumin seeds, carom seeds, black mustard seeds, fenugreek seeds and fennel
seeds) – 1 tsp
6. Salt
7. Oil – 1 tbsp
8. Turmeric powder- ½ tsp
9. Kashmiri red chili powder – 1 tsp
10. Jaggery – 100 grams or as per
taste
11. Corn flour – 1 tbsp
12. Roasted cumin powder – 2 tsp
Methods of preparing raw mango curry:
1. Wash and cut raw mango into square
pieces. (don’t peel the skin of the mangoes)
2. Grate ginger. Fry cumin seeds and make
course powder out of it. Take whole red chilies and curry leaves.
3. Heat 1 tbsp oil in a kadhai or pan.
Add punch phoran in it. When it starts crackle add grated ginger, red chilies
and curry leaves in it. Fry it for while till the raw smell of ginger went
away.
4. Now add raw mango pieces, salt,
Kashmiri red chili powder and turmeric powder and saute.
5. Cover the mango with a lid and let
it cook for 10 minutes or till the mango cooked. Make sure that it will not over
cook.
6. After 10 minutes remove the lid
and add jaggery. Cook it till the jaggery melted and mixed with the mango
pieces.
7. Add ½ cup water and let it boil
for a while. Now take a small bowl and take 1 tbsp corn flour in that bowl. Mix
water in the corn flour and make a thin batter. Add the batter in the curry. Stir
continuously till the gravy became thick.
8. Now add roasted cumin powder and
mix well.
9. Raw mango curry is ready to serve.

STEP-1:
Wash mango properly
and cut it into big pieces.
STEP-2:
Grate ginger. Take whole
red chilies and curry leaves. Roast cumin seeds and make powder out of it.
STEP-3:
Heat 1 tbsp oil in a
pan.
STEP-4:
Add punch phoran in it.
STEP-5:
Add grated ginger,
curry leaves and whole red chilies in it and saute.
STEP-6: Add raw mango pieces, salt,
turmeric powder and Kashmiri red chili powder in it.
STEP-7:
Fry the mango pieces
for a while.
STEP-8:
cover the pan with lid
and let it cook for 5 to 10 minutes.
STEP-9:
After 5 to 10 minutes
remove the lid and check if the mango cooked properly.
STEP-10:
Add jaggery and cook
till it melts.
STEP-11:
Add ½ cup water and
let it boil.
STEP-12:
Take 1 tbsp corn
starch in a bowl.
STEP-13:
Add water in it and
make a thin batter.
STEP-14:
Add the corn flour
batter into the curry slowly and stir continuously till the gravy became thick.

Add roasted cumin
powder and mix well.
STEP-16:
Transfer it to a
serving bowl and serve as side dish with rice and dal or roti.
