RAJMA RECIPE/ HOW TO MAKE RAJMA MASALA
RAJMA MASALA is a popular north-indian
recipe made with rajma or kidney beans cooked in thick spicy onion-tomato gravy
with cumin seeds and dried fenugreek leaves.
Rajma or kidney beans have many health
benefits due to its high fiber content. It is also good for those who have low
level of iron including kids and pregnant women.
Rajma
masala is a delicious and easy recipe. It goes very well with plain rice, roti,
naan, paratha and jeera rice. Infact rajma rice or rajma chawal is one of the
most loved meals in India.
Rajma masala is a protein rich red kidney
beans curry which is one of healthiest and easiest to make.
INGREDIENTS OF RAJMA
MASALA:
1. Rajma or kidney beans- 2 cups
2. Onion-1(big)
3. Tomatoes-3(medium)
4. Ginger-garlic paste-2 tbsp
5. Turmeric powder- ½ tsp
6. Cumin powder- ½ tsp
7. Coriander powder-1 tsp
8. Red chili powder-1 tsp
9. Kashmiri red chili powder-1 tsp
10. Garam masala – ½ tsp
11. Kasoori methi- 1 tsp
12. Cream-2tsp(optional)
13. Chopped coriander leaves-2 tbsp
14. Cloves-2
15. Cinnamon-1
16. Green cardamom-2
17. Bay leaves-2
HOW TO MAKE RAJMA
MASALA
1. Wash and soak rajma or kidney beans for 7 to 8
hours or overnight.
2. Drain water and transfer the
soaked beans into a pressure cooker. Add cloves, cinnamon, bay leaves, green
cardamom and salt. Add 3 cups water and close the lids.Pressure cook it over
medium flame until 4 to 5 whistles. Let the pressure cooker cool completely.
3. Make onion paste, ginger garlic
paste and tomato paste separately.
4. Heat oil in a kadhai or pan and
add cumin seeds. Let the cumin seeds splutter. Add onion paste and saute till
the color of onion changes into light brown. Add ginger- garlic paste and fry
it till the raw smell of ginger and garlic disappeared.
5. Now add dry masalas like turmeric
powder, coriander powder, cumin powder, red chili powder and garam masala. Mix
well.
6. Add tomato paste and cook the
masala till the oil starts leaving the masala.
7. By using a strainer, strain rajma
from its stock. Keep the stock aside for later use. Add the boiled rajma in
masala and mix well.
8. Add salt and kasoori methi and
stir. Saute it for 1 to 2 minutes. Then add the stock and let it simmer for 4
to 5 minutes.
9. Mash few rajma beans to thicken
the gravy. When rajma masala became thicken and comes to the right consistency,
add chopped coriander leaves and cream to garnish the dish.
10. Rajma masala is ready now. Serve hot
with rice or any Indian breads.
HOW TO MAKE RAJMA
MASALA WITH STEP BY STEP PHOTO:
STEP-1:
Wash and soak rajma or

STEP-8: Add onion paste and saute till
the color of onion changes into light brown.

Add ginger- garlic paste and fry it till the raw smell of ginger and garlic
disappeared.
STEP-10:
Now add dry masalas
like turmeric powder, coriander powder, cumin powder, red chili powder,green chilies and
garam masala. Mix well.
STEP-11: Add
tomato paste and cook the masala till the oil starts leaving the masala.
