KHATTA
MEETHA PUMPKIN is one of the easiest and quickest recipes, which made with
kaddu or pumpkin. This is a red pumpkin based recipe in which simple kaddu or
pumpkin chunks cooked with sour amchur powder, sweet sugar or jaggery and loth
of whole spices. Kaddu ki sabzi or khatta meetha pumpkin is one of the popular
recipes; prepared during Navaratri fast, religious ceremonies and Festivals.
Pumpkin
is considered as a healthy vegetable. It is full of calcium and potassium. Pumpkin
is also a good source of dietary fibers. Its seeds are full of vitamins, proteins
and minerals.
KHATTA
MEETHA PUMPKIN RECIPE is a healthy dish, which goes well with puries and
parathas. The sweet and savory taste of this recipe cannot be compared with any
other vegetables.
INGREDIENTS
FOR KHATTA MEETHA PUMPKIN
1. Red pumpkin- 500 grams
2. Panch phoran- 1 tsp (mix of fenugreek seed,nigella seed, cumin seed, black mustard seed and fennel seed)
3. Mustard oil – 2 tbsp
4. Dry red chilies-2
5. Ginger (grated)- 1 tbsp
6. Curry leaves- 2 tbsp
7. Turmeric powder – ½ tsp
8. Coriander powder – 1 tsp
9. Kashmiri red chili powder – 1 tsp
10. Amchur powder – 2 tbsp
11. Sugar – 2 to 3 tbsp
12. Chopped coriander leaves – 2 tbsp
How
to make khatta meetha pumpkin recipe:
1. Wash and cut pumpkin into 2-3 cm cubes. you can peel the pumpkin.
2. Heat 2-tbsp oil in a pan.
3. Add panch phoran in it .
4. When it started crackling add dry
red chilies, curry leaves and grated ginger and saute for while.
5. Now add chopped pumpkins and mix.
6. Add salt and turmeric powder. Stir-
fry the pumpkin on high flame till it looks glossy.
7. Now add coriander powder, Kashmiri
red chili powder and cumin powder. Mix well.
8. Reduce heat and cover the lid on
kadhai and let it simmer till it cook through.
9. Remove the lid and check the
pumpkin.
10. Now add sugar and amchur powder
and mix well.
11. Let it cook for 2 to 3 minutes.
12. Transfer it to a serving bowl and
garnish with chopped coriander leaves. (I have not used coriander leaves)
13. Serve hot with puri or paranthas
