HOW TO MAKE CHICKEN KORMA
Chicken
korma is a traditional Indian dish, originating in the Indian sub continent,
consisting of meat, braised with curd or cream, water and spices to produce
thick sauce or gravy. It goes well with rice, roti, parantha, naan or any other Indian bread.
Chicken korma can be made in
various ways. So, the ingredients may differ. Curd and crisp fried onions are
one of the main ingredients used in korma. Cream and cashews are used to enhance
the richness of the dish.
Here I have posted a simple and
quick recipe of chicken korma without using cream and cashew. To learn a simple
style chicken korma recipe follow my recipe step by step.
INGREDIENTS:
1. Chicken-750grams
2. Onion-2(sliced)
3. Curd-1cup
4. Ginger-garlic paste-2tbsp
5. Coriander powder-2to3tsp
6. Cumin powder-1tsp
7. Red chilli powder-2tsp
8. Kashmiri red chilli powder-2tsp
9. Turmeric powder-1tsp
10. Oil
11. Besan(gram flour)-2tbsp(fried)
12. Salt
13. Clove-2to3
14. Cinnamons-3to4
15. Bay leaves-2to3
16. Garam masala-1/2tsp
17. Chopped coriander leaves-1/2cup
18.Green Cardamom (chhoti illaichi)-3to4
19. Tomato(optional)
20. Cashews(optional)
HOW
TO MAKE CHICKEN KORMA:
STEP-1:
Marinate the chicken pieces with curd, ginger-garlic paste, fried besan, coriander
powder, cumin powder, red chilli powder, Kashmiri red chilli powder and keep it
aside for 30mins.
STEP-2:
Heat oil in a pan and deep fry the onion slices till the onions become brown
and crisp. Transfer it to a plate and keep aside.
STEP-3:
Heat 3 to 4 tbsp of oil in a kadhai or pan and add clove, bay leaves, cinnamon and
cardamoms. Saute it for a while. Then add marinated chicken and cook for 1 to
2 mins in high flame.
STEP-4:
After 2mins add little water and cover the lid on it. Let it to cook for
15mins. Keep stirring occasionally.
STEP-5:
After 15mins add fried onions,chopped tomatoes and garam masala and again cover
the lid on and let it to cook for another 10mins. Keep stirring occasionally.
STEP-6:
After 10mins you can see the chicken has become cooked and the oil has come
out.
STEP-7:
Add required amount of water for gravy and bring it to a boil. Adjust the
consistency of the gravy.
STEP-8:
Garnish with coriander leaves and serve hot.
