HOW TO MAKE LAUKI KE KOFTE RECIPE/ BOTTLE GOURD KOFTA RECIPE
Lauki
ka kofta recipe/how to make lauki kofta or bottle gourd kofta recipe is a simple, healthy recipe
prepared from deep fried grated bottle gourd or lauki with tomato and onion
based sauce.
Lauki
or bottle gourd is not a popular vegetable in every household. Basically any
lauki curries or subzis are not appreciated and is not preferred to consume. But
certainly the kofta curry or lauki kofta recipe would be good alternative which
is tasty yet healthy and nutritious.
Here I have posted how to make lauki
kofta recipe with step by step process with photo of every step.The important
step is squeezing the grated lauki so that the liquid content of the lauki can
be reduced and perfect kofta can be made. The other important step is adding
right amount of besan or chick flour in it. As besan is a binding agent, right
amount of besan will make the kofta perfect, otherwise koftas or lauki pakoras
will break while frying.
INGREDIENTS:
INGREDIENTS FOR MAKING LAUKI KOFTAS OR
PAKORAS:

Lauki or bottle gourd-500 grams
·
Onion-1(chopped)
·
Green
chili-3(chopped)
·
Grated
ginger-1/2 tsp
·
Coriander
leaves-2 tbsp(chopped)
·
Kasoori
methi-1 tsp
·
Cumin
seeds-1/2 tsp
·
Black
pepper powder-1/2 tsp
·
Red
chili powder-1 tsp
·
Garam
masala-1/2 tsp
·
Besan-5
to 6 tbsp
·
Oil
for frying koftas
INGREDIENTS FOR MAKING GRAVY:

Onion-1
·
Garlic- 6 to 7
·
Ginger-1 inch
·
Tomatoes-2
·
Coriander
powder-2 tsp
·
Cumin
powder-1 tsp
·
Red
chili powder-2 tsp
·
Turmeric
powder-1/2 tsp
·
Garam
masala-1/2 tsp
·
Kasoori
methi-1/2 tsp
·
Salt
·
oil
·
Cream
(for garnishing)
·
Chopped
coriander leaves-2 tbsp
METHODS FOR PREPARING LAUKI KE KOFTE:
FOR MAKING KOFTE OR PAKORAS:
STEP-1: Peel
the lauki and rinse it. Grate it. Squeeze out the liquid content from grated
lauki and keep in a bowl.
STEP-2: Add
chopped onions, chopped green chili, grated ginger and chopped coriander leaves
in grated lauki. Mix it.
STEP-3:
Now add garam masala, kasoori methi, pepper powder, crushed cumin seeds,
carom seeds and red chili powder.
STEP-4:
Add besan and
mix it well. Make small balls or patties out of it. Heat oil in a frying pan
and deep fry the balls in the oil. Fry the koftas or pokoras till they are
evenly golden brown from all sides.
(Healthy option
of this recipe is here you can use appam pan for making koftas or pakoras. So
that oil consumption will be less)
STEP-5:
remove the
koftas from oil and keep on tissues so that the extra oil is absorbed.
FOR MAKING GRAVY OF LAUKI KOFTA:
STEP-1: Make a paste of onion, ginger and
garlic. Make a puree of tomatoes. Chop coriander leaves.
STEP-2:
Heat 3 to 4 tbsp oil
in a kadhai. Add cumin seeds and let it splutter. Add onion paste and stir
till it changes its colour.
STEP-3: Now add coriander powder, cumin
powder, red chili powder, turmeric powder and fry it for a while.
STEP-4:
Add tomato puree and fry for 2 minutes. Add salt and fry the masala till it
starts leaving oil from the sides.
STEP-5:
Add kasoori
methi and garam masala in it and mix well. Add 2 cups water and let it boil till
the right consistency of gravy comes.
STEP-6:
Now add fried
koftas init and let it simmer for 10 minutes. After 10 minutes, switch off the
flame and garnish with chopped coriander leaves and little cream. Now lauki
kofta is ready. Serve hot with roti, paratha, naan, kulcha or rice.

WITH PHOTOES:
FOR MAKING KOFTAS OR PAKORAS:
STEP-1: Rinse and peel the lauki.
STEP-2:
grate the
lauki.
STEP-3:
squeez out the
grated lauki and keep in a bowl.
STEP-4:
Add chopped
onion, green chilies, grated ginger and chopped coriander leaves. Mix well.
STEP-5:
Now add red
chili powder, salt, garam masala, kasoori methi, pepper powder carom seeds and
crushed cumin seeds.
STEP-6:
Add besan and
mix well.
STEP-7: Heat
oil in a frying pan.
STEP-8:
make small
balls out of the lauki and besan mix and fry it in the oil.
STEP-9:
Fry the balls
or pakoras or koftas till it golden brown from all sides.
STEP-10: drain
the pakoras or koftas on tissues and keep aside.
FOR MAKING GRAVY:
STEP-11: Heat
oil in a kadhai.
STEP-12: Add cumin seeds and let it
splutters.
STEP-13: Add onion, ginger and garlic
paste and fry for a while.
STEP-14: Then add coriander powder, cumin
powder,red chili powder and turmeric powder and mix well. Cook it for a while.
STEP-15: Add tomato puree and cook till it
become dry and cooked properly.
STEP-16: Add kasoori methi and garam
masala and fry the masala till it leaves oil from sides.
STEP-17: Now add water as required and let
it boil.
STEP-18: Add koftas or pakoras in it and
let it simmer for 10 minutes.
STEP-19: Garnish with chopped coriander and little
cream.
STEP-20:
Transfer it to
a serving bowl and serve hot.
