KATHAL KOFTA CURRY/ JACKFRUIT KOFTA CURRY/ KATHAL KA KOFTA RECIPE

KATHAL KA KOFTA RECIPE OR KATHAL KOFTA CURRY OR JACK-FRUIT KOFTA CURRY

              KATHAL KA KOFTA RECIPE OR KATHAL KOFTA CURRY OR JACk fRUIT KOFTA CURRY is a flavourful vegetarian recipe made from raw jack-fruit and added to delicious onion-tomato gravy. Kathal kofta curry is an exotic side- dish for any type of get together or party.

         Kathal or jack-fruit is my favorite summer vegetable. It is considered a healthy vegetable because it is rich in nutrients and minerals.

        Though this vegetable is little complicated to cut and clean but now-a-days, peeled and cleaned raw jack-fruits are easily available in market. You just bring and cut it into pieces as you required. Before cutting kathal apply some oil on your palm and knife so that it will not stick on your hand and knife.

       Kofta curries are considered unhealthy because of deep fried koftas. But here I have made it in healthy way by using appam pan to make koftas with little oil.



 

INGREDIENTS FOR KATHAL KOFTA CURRY:

FOR KOFTA:

·        Raw kathal or jack fruit - 500 grams
·        Besan – ½ cup or as required to make koftas
·        Onion -1 (chopped)
·        Green chilies-2 to 3 (chopped)
·        Chopped Coriander leaves- ½ cup
·        Salt
·        Cumin powder- ½ tsp
·        Turmeric powder- ½ tsp
·        Red chili powder- 1 tsp
·        Black pepper powder – ½ tsp
·        Chat masala- ½ tsp
·        oil

 


FOR GRAVY:

·        Onion – 1(big)
·        Tomatoes-2
·        Ginger-1 inch
·        Garlic- 7 to 8 cloves
·        Kaju – 7 to 8
·        Turmeric powder – ½ tsp
·        Coriander powder- 1 tsp
·        Cumin powder – ½ tsp
·        Red chili powder -1 tsp
·        Kashmiri red chili powder -1 tsp
·        Garam masala – 1 tsp
·        Kasoori methi – 1 tsp
·        Curd – 4 tbsp
·        Cream – 3 to 4 tbsp(optional)
·        Chopped coriander leaves  for garnishing
·        Salt
·        oil


Methods of mAKing KATHAL KA KOFTA curry OR JACK-FRUIT KOFTA curry:


FOR MAKING KOFTAS:

1. Peel and cut raw kathal into small pieces. Wash it properly.
2. Put kathal pieces in a pressure cooker with salt and little water. Close the lid of the cooker and cook it on medium flame till 1 or 2 whistles comes.
3. Let the cooker completely cool. Open the lid and drain the kathal pieces from water.
4. Put dry kathal pieces in to a big bowl. Add salt, cumin powder, pepper powder, red chili powder, turmeric powder, chat masala and required amount of besan. Mix well. Then add chopped onion, green chilies and coriander leaves.
5. Mix all ingredients very well by using hand. Make small balls out of the mixture.
You can deep fry the balls or koftas by taking oil in a pan, but here I have fried the koftas or balls in a very healthy way by using appam pan.
6. Take appam pan and heat it. Brush oil in each of it's grooves of appam pan. Put the koftas one by one in each grooves of appam pan. Cover a lid and let the koftas cook for 1 minute. After 1 minute flip the koftas and let cook the other side of the koftas. Cook the koftas by turning it time to time till it cooks evenly from all sides. Transfer koftas in a plate and keep aside.

FOR MAKING GRAVY:


1. Chop onion, tomatoes and ginger. Peel garlic. Heat 1tbsp oil in a pan. Add ginger and garlic and saute for a while. Add chopped onion and fry till it becomes soft. Now add chopped tomatoes and kaju. Fry all ingredients till tomatoes become soft.
2. Remove it from flame and keep it to cool. Now take it in a blending jar and make a paste out of it.
3. Again heat oil in a kadhai or pan and add Kashmiri red chili powder. Immediately add masala paste in it and stir very well. Fry the masala for 2 minutes and then add coriander powder, cumin powder, red chili powder, garam masala and turmeric powder in it. Mix it well.
4. Add curd in the masala and mix well. Cook the masala till it leaves oil from surface. Now add 2 cups of water and let it boil.
5. When gravy becomes thick, add fried koftas in it. Let it simmer for 5 minutes. Add kasoori methi in it and mix well. Now it is ready to serve. Garnish it with chopped coriander leaves and cream.

HOW TO MAKE KATHAL KOFTA CURRY WITH STEP BY STEP PHOTO


STEP-1: FOR MAKING KOFTAS:

·        Add salt, cumin powder, pepper powder, red chili powder, turmeric powder, chat masala and required amount of besan in it.

·        Mix all dry ingredients well with boiled kathal. Now add chopped onion, green chilies and coriander leaves.

·        Mix all ingredients very well by using hand.

·        Make small balls out of the mixture.

·        Take appam pan and heat it. Brush oil in all grooves of the appam pan.

·        Put the koftas one by one in each grooves of appam pan.let it cooks for 1 minute.

·       After 1 minute flip the koftas and let cook the other side of the koftas. Cook the koftas by turning it time to time till it cooks evenly from all sides.

·        Transfer koftas in a plate and keep aside.

STEP-2: FOR MAKING GRAVY:

·        Chop onion, tomatoes and ginger. Peel garlic.

·        Heat 1tbsp oil in a pan.

·        . Add ginger and garlic and saute for a while.

·        Add chopped onion and fry till it becomes transparent.

·        Now add chopped tomatoes and kaju. Fry all ingredients till tomatoes become soft.

·        Put all in a blending jar and make a paste out of it.

·        Again heat oil in a kadhai or pan and add Kashmiri red chili powder.

·        Add masala paste and give it a good stir.

·        Fry the masala for 2 minutes and then add coriander powder, cumin powder, red chili powder, garam masala and turmeric powder in it. Mix it well.

·        Add curd in the masala and mix well.

    .Cook the masala till it leaves oil from surface.Add 2 cups water and mix well. Let it boil for a while. Add koftas or kathal balls in it. Let it simmers for 5 minutes.

·        Add kasoori methi and mix well.

·        Add chopped coriander leaves. Here you can add cream for garnishing. I have not added cream.

LAUKI KOFTA RECIPE/ HOW TO MAKE LAUKI KE KOFTE RECIPE/ BOTTLE GOURD KOFTA RECIPE

           Lauki ka kofta recipe/how to make lauki kofta or bottle gourd kofta recipe is a simple, healthy recipe prepared from deep fried grated bottle gourd or lauki with tomato and onion based sauce.

          Lauki or bottle gourd is not a popular vegetable in every household. Basically any lauki curries or subzis are not appreciated and is not preferred to consume. But certainly the kofta curry or lauki kofta recipe would be good alternative which is tasty yet healthy and nutritious.


        Here I have posted how to make lauki kofta recipe with step by step process with photo of every step.The important step is squeezing the grated lauki so that the liquid content of the lauki can be reduced and perfect kofta can be made. The other important step is adding right amount of besan or chick flour in it. As besan is a binding agent, right amount of besan will make the kofta perfect, otherwise koftas or lauki pakoras will break while frying.


INGREDIENTS:

INGREDIENTS FOR MAKING LAUKI KOFTAS OR PAKORAS:


·        Lauki or bottle gourd-500 grams
·        Onion-1(chopped)
·        Green chili-3(chopped)
·        Grated ginger-1/2 tsp
·        Coriander leaves-2 tbsp(chopped)
·        Kasoori methi-1 tsp
·        Cumin seeds-1/2 tsp
·        Black pepper powder-1/2 tsp
·        Red chili powder-1 tsp
·        Garam masala-1/2 tsp
·        Besan-5 to 6 tbsp
·        Oil for frying koftas

INGREDIENTS FOR MAKING GRAVY:


·        Onion-1
·        Garlic- 6 to 7
·        Ginger-1 inch
·        Tomatoes-2
·        Coriander powder-2 tsp
·        Cumin powder-1 tsp
·        Red chili powder-2 tsp
·        Turmeric powder-1/2 tsp
·        Garam masala-1/2 tsp
·        Kasoori methi-1/2 tsp
·        Salt
·        oil
·        Cream (for garnishing)
·        Chopped coriander leaves-2 tbsp

 

METHODS FOR PREPARING LAUKI KE KOFTE:

FOR MAKING KOFTE OR PAKORAS:

STEP-1: Peel the lauki and rinse it. Grate it. Squeeze out the liquid content from grated lauki and keep in a bowl.

STEP-2: Add chopped onions, chopped green chili, grated ginger and chopped coriander leaves in grated lauki. Mix it.

STEP-3:  Now add garam masala, kasoori methi, pepper powder, crushed cumin seeds, carom seeds and red chili powder.

STEP-4: Add besan and mix it well. Make small balls or patties out of it. Heat oil in a frying pan and deep fry the balls in the oil. Fry the koftas or pokoras till they are evenly golden brown from all sides.
(Healthy option of this recipe is here you can use appam pan for making koftas or pakoras. So that oil consumption will be less)

STEP-5: remove the koftas from oil and keep on tissues so that the extra oil is absorbed.

FOR MAKING GRAVY OF LAUKI KOFTA:


STEP-1: Make a paste of onion, ginger and garlic. Make a puree of tomatoes. Chop coriander leaves.

 STEP-2: Heat 3 to 4 tbsp oil in a kadhai. Add cumin seeds and let it splutter. Add onion paste and stir till it changes its colour.

STEP-3: Now add coriander powder, cumin powder, red chili powder, turmeric powder and fry it for a while.

 STEP-4: Add tomato puree and fry for 2 minutes. Add salt and fry the masala till it starts leaving oil from the sides.

STEP-5: Add kasoori methi and garam masala in it and mix well. Add 2 cups water and let it boil till the right consistency of gravy comes.

STEP-6: Now add fried koftas init and let it simmer for 10 minutes. After 10 minutes, switch off the flame and garnish with chopped coriander leaves and little cream. Now lauki kofta is ready. Serve hot with roti, paratha, naan, kulcha or rice.

STEP-1: Rinse and peel the lauki.

 STEP-7: Heat oil in a frying pan.

STEP-8: make small balls out of the lauki and besan mix and fry it in the oil.

STEP-9: Fry the balls or pakoras or koftas till it golden brown from all sides.

 STEP-10: drain the pakoras or koftas on tissues and keep aside.

FOR MAKING GRAVY:


 STEP-11: Heat oil in a kadhai.

STEP-12: Add cumin seeds and let it splutters.

STEP-13: Add onion, ginger and garlic paste and fry for a while.

STEP-14: Then add coriander powder, cumin powder,red chili powder and turmeric powder and mix well. Cook it for a while.

STEP-15: Add tomato puree and cook till it become dry and cooked properly.

STEP-16: Add kasoori methi and garam masala and fry the masala till it leaves oil from sides.

STEP-17: Now add water as required and let it boil.
