PANEER DO PYAZA RECIPE:

         Paneer do pyaza is a delicious paneer dish made with cottage cheese or paneer in onion gravy. In this recipe onion is used double as name suggests. The amount of onion used here is relatively larger compared with other ingredients.

          In paneer do pyaza, onions are added at two stages, firstly, chopped onions are added in gravy and secondly, sauteed onions cubes are added to the curry along with paneer.

           Paneer do pyaza is a simple and delicious recipe which can be made in any type of party and get together. It can be served with rice, flavored rice, roti, paratha or any Indian bread.

4. MATAR PANEER    



INGREDIENTS:


·        Paneer or cottage cheese-250 grams
·        Onions-2(big)
·        Tomatoes- 2
·        Ginger-garlic paste-2 tbsp
·        Red chili powder-1 tsp
·        Coriander powder-2 tsp
·        Cumin powder-1 tsp
·        Turmeric powder-1/2 tsp
·        Cream -2 tbsp
·        Cumin seeds-1/2 tsp
·        Garam masala-1/2 tsp
·        Chopped coriander leaves-2 tbsp
·        Salt
·        Oil
·        Kasoori methi-1 tsp

INGREDIENTS FOR MARINATION OF PANEER:


·        Curd-2 tbsp
·        Red chili powder-1 tsp
·        Turmeric powder-1/2 tsp
·        Black pepper powder-1/2 tsp
·        Kasoori methi-1 tsp
·        salt


METHODS OF PREPARING PANEER DO PYAZA:


STEP-1: Cut the paneer into cubes and marinate it with curd, salt, turmeric powder, pepper powder, red chili powder and kasoori methi.

STEP-2: Cut one onion into big cubes and separate the layers. Chop the other onion finely. Chop tomatoes and make puree out of it.

STEP-3: Heat little oil in a pan and fry the cubed onion. Transfer it to a plate and keep aside.

STEP-4: Again heat some oil in the same pan and add marinated paneer in it. Fry paneer till it become dry and become light brown.

STEP-5: Now heat 4 to5 tbsp oil in a kadhai and add cloves, green cardamom and cumin seeds in the oil. Let it splutter.

STEP-6: Add chopped onions and saute till it become translucent. Then add ginger –garlic paste and fry it till the raw smell of ginger and garlic disappeared.

STEP-7: Add tomato puree and fry for a while. Add coriander powder, cumin powder, red chili powder, turmeric powder and garam masala.Fry it till it completely cooked.

STEP-8: Add salt and then kasoori methi in it and fry the masala. Now add cream and mix it. Fry again.

STEP-9: Add ½ cup water and let it boil till the gravy become thick. Add fried paneer and mix well. Now add fried onions and   stir. 

STEP-10: cover the lid and let it simmer for 6 to 7 minutes. Remove the lid after 6 minutes and check the consistency of the gravy. Adjust the consistency of the gravy and add chopped coriander leaves.

STEP-11: pour some cream on it and serve hot with any Indian breads or rice. You can also garnish it with grated paneer.

STEP-1: Cut paneer into cubes.

STEP-3: Mix well and keep aside.

STEP-4: Cut one big onion into cubes and fry it.

STEP-5: keep the fried onions in a plate.

STEP-7: Transfer the fried paneer to the plate with onions.

STEP-8: Heat oil in the same kadhai or pan and add cumin seeds, cloves and cardamoms and let it splutter.

STEP-9: Add finely chopped onions and saute it till it becomes light brown.

STEP-10: Then add ginger-garlic paste and fry it.

STEP-11: Now add tomato puree and cook for a while.

STEP-12: Add dry masalas like coriander powder, cumin powder, red chili powder, garam masala and turmeric powder and fry.

STEP-13: Now add salt as required and mix well.

STEP-14: Add kasoori methi and mix well.

STEP-15: Add 2 tbsp cream and fry the masala well.

STEP-16: Add one cup water and mix well.

STEP-17: Cover the lid and let it simmer for 5 to 6 minutes.

STEP-18: Remove the lid and add fried paneer. mix well.

STEP-19: Now add fried onions and let it simmer again for 2 minutes.

STEP-20: Adjust the consistency of the gravy and garnish with chopped coriander leaves and cream.

STEP-21: Transfer it to a serving bowl and serve hot.
