KATHAL KA KOFTA RECIPE OR KATHAL KOFTA CURRY OR JACK-FRUIT KOFTA CURRY
KATHAL KA KOFTA RECIPE OR KATHAL KOFTA CURRY OR JACk fRUIT KOFTA CURRY is a flavourful vegetarian recipe made from raw jack-fruit and added to delicious onion-tomato gravy. Kathal kofta curry is an exotic side- dish for any type of get together or party.
Kathal
or jack-fruit is my favorite summer vegetable. It is considered a healthy
vegetable because it is rich in nutrients and minerals.
Though
this vegetable is little complicated to cut and clean but now-a-days, peeled
and cleaned raw jack-fruits are easily available in market. You just bring and
cut it into pieces as you required. Before cutting kathal apply some oil on
your palm and knife so that it will not stick on your hand and knife.
Kofta
curries are considered unhealthy because of deep fried koftas. But here I have
made it in healthy way by using appam pan to make koftas with little oil.
INGREDIENTS FOR KATHAL
KOFTA CURRY:
FOR KOFTA:

Raw
kathal or jack fruit - 500 grams
·
Besan
– ½ cup or as required to make koftas
·
Onion
-1 (chopped)
·
Green
chilies-2 to 3 (chopped)
·
Chopped
Coriander leaves- ½ cup
·
Salt
·
Cumin
powder- ½ tsp
·
Turmeric
powder- ½ tsp
·
Red
chili powder- 1 tsp
·
Black
pepper powder – ½ tsp
·
Chat
masala- ½ tsp
·
oil
FOR GRAVY:
·
Onion
– 1(big)
·
Tomatoes-2
·
Ginger-1
inch
·
Garlic-
7 to 8 cloves
·
Kaju
– 7 to 8
·
Turmeric
powder – ½ tsp
·
Coriander
powder- 1 tsp
·
Cumin
powder – ½ tsp
·
Red
chili powder -1 tsp
·
Kashmiri
red chili powder -1 tsp
·
Garam
masala – 1 tsp
·
Kasoori
methi – 1 tsp
·
Curd
– 4 tbsp
·
Cream
– 3 to 4 tbsp(optional)
·
Chopped
coriander leaves for garnishing

Methods of mAKing KATHAL KA KOFTA curry OR JACK-FRUIT KOFTA curry:
FOR MAKING KOFTAS:
1. Peel and cut raw kathal into small
pieces. Wash it properly.
2. Put kathal pieces in a pressure
cooker with salt and little water. Close the lid of the cooker and cook it on
medium flame till 1 or 2 whistles comes.
3. Let the cooker completely cool.
Open the lid and drain the kathal pieces from water.
4. Put dry kathal pieces in to a big
bowl. Add salt, cumin powder, pepper powder, red chili powder, turmeric powder,
chat masala and required amount of besan. Mix well. Then add chopped onion,
green chilies and coriander leaves.
5. Mix all ingredients very well by
using hand. Make small balls out of the mixture.
You
can deep fry the balls or koftas by taking oil in a pan, but here I
have fried the koftas or balls in a very healthy way by using appam pan.
6. Take appam pan and heat it. Brush
oil in each of it's grooves of appam pan. Put the koftas one by one in each grooves of appam
pan. Cover a lid and let the koftas cook for 1 minute. After 1 minute flip the
koftas and let cook the other side of the koftas. Cook the koftas by turning it
time to time till it cooks evenly from all sides. Transfer koftas in a plate
and keep aside.
FOR MAKING GRAVY:
1. Chop onion, tomatoes and ginger.
Peel garlic. Heat 1tbsp oil in a pan. Add ginger and garlic and saute for a
while. Add chopped onion and fry till it becomes soft. Now add chopped tomatoes
and kaju. Fry all ingredients till tomatoes become soft.
2. Remove it from flame and keep it
to cool. Now take it in a blending jar and make a paste out of it.
3. Again heat oil in a kadhai or pan
and add Kashmiri red chili powder. Immediately add masala paste in it and stir
very well. Fry the masala for 2 minutes and then add coriander powder, cumin
powder, red chili powder, garam masala and turmeric powder in it. Mix it well.
4. Add curd in the masala and mix
well. Cook the masala till it leaves oil from surface. Now add 2 cups of water
and let it boil.
5. When gravy becomes thick, add
fried koftas in it. Let it simmer for 5 minutes. Add kasoori methi in it and
mix well. Now it is ready to serve. Garnish it with chopped coriander leaves
and cream.
HOW TO MAKE
KATHAL KOFTA CURRY WITH STEP BY STEP PHOTO
STEP-1: FOR MAKING KOFTAS:

the lid of the cooker and cook it on medium flame till 1 or 2 whistles comes.Let

masala and required amount of besan in it.

Mix
all dry ingredients well with boiled kathal. Now add chopped onion, green
chilies and coriander leaves.
· After 1 minute flip the koftas and
let cook the other side of the koftas. Cook the koftas by turning it time to
time till it cooks evenly from all sides.
STEP-2: FOR MAKING GRAVY:

Fry
the masala for 2 minutes and then add coriander powder, cumin powder, red chili
powder, garam masala and turmeric powder in it. Mix it well.
·
Add
curd in the masala and mix well.
.Cook the masala till it leaves oil from surface.Add 2 cups water and mix well. Let it boil for a while. Add koftas or kathal balls in it. Let it simmers for 5 minutes.
