PHULKI RECIPE/ QUICK AND EASY DAHI PHULKI RECIPE
DAHI PHULKI
RECIPE is
a simple and delicious snack recipe. This recipe is an easy and quick recipe
made with besan or chickpea flour and dahi or curd as main ingredients. This dahi
phulki recipe is slightly different from dahi vada recipe. Here we use besan
instead of dal. Another difference is, in dahi phulki we do not soak vadas in
water before adding in dahi or curd. We add directly in curdmix.
DAHI
PHULKI RECIPE
is one of the easiest and quickest recipes. It is yummy in taste and very light
to eat. To make dahi phulki first fry the besan pakoras and then drop the
pakoras in dahi and spices mix.
INGREDIENTS
FOR DAHI PHULKI:
For making vada:
1. Besan-
1cup
2. Cooking
soda- ½ tsp
3. Salt
4. Turmeric
powder – ½ tsp
5. Red
chili powder – 1tsp
6. Onion-1(chopped)
7. Green
chilies-3 (chopped)
8. Coriander
leaves-1 cup(chopped)
9. Oil-
for frying vada
For
dahi:
1. Dahi- 2 cups
2. Salt
3. Black salt-1tsp
4. Chat masala – 2 tsp
5. Red chili powder-1tsp
6. Roasted jeera powder-1 tsp
7. Black pepper powder- ½ tsp
For
tempering or tadka:
1. Oil
2. Cumin seeds- ½ tsp
3. Mustard seeds- ½ tsp
4. Curry leaves- 2 strings
5. Red chilies-3 to4
6. Hing- pinch
Methods of making dahi phulki:
For making vada:
1. Take 1 cup besan or chickpeas
flours in a big bowl. Add salt, turmeric powder, red chili powder, cooking
soda, chopped onions, green chillies, chopped coriander leaves and garam masala
in it.
2. Mix water in above ingredients and
make a thick batter. Keep the batter aside for 10 minutes.
3. Heat oil in a pan or kadhai for
frying the vadas.
4. When the oil became hot, reduce
the flame to medium and drop small portion of batter into oil by using hand or
spoon and repeat the process till the kadhai or pan full with small balls of
besan batter (kadhai or pan should not be overcrowded). Fry the vadas or balls
till it cooked evenly from all sides.
5. Drain the vadas from oil and keep
on a plate.
FOR MAKING DAHI FOR DAHI PHULKI:
1. Take 2 cups of dahi in a big bowl.
Add salt, black salt, black pepper, chat masala, roasted jeera powder and red
chili powder in it and beat it properly.
2. Add 2 cups water or required
amount of water and mix well.
3. Add fried vada in the dahi mix and
let it rest for 15 minutes.
For tempering or tadka:
1. Take a tadka pan and heat oil in
this tadka pan.
2. Add cumin seeds and mustard seeds
in it and let it splutter. Then add curry leaves and red chilies in it. Fry it
for a while and pour the tadka on dahi phulki. Mix well and serve hot or
chilled.
How to make dahi phulki with step by step photo:
STEP-1:
take besan or chickpea flour in a bowl.
STEP-2: Add salt, red chili powder, cumin powder
and turmeric powder in it.
STEP-3: Then
add water and make a thick batter out of it.
STEP-4: Add chopped onion, chopped green chilies, chopped coriander leaves and cooking soda in this batter and mix well.
STEP-5: heat oil in a pan.
STEP-6: Drop
little batter in the oil by using hand or spoon and fry it till it evenly cooked
from all sides.
Make all vadas with the same process.
STEP-7: Transfer all vadas to a plate and keep
aside.
STEP-8: Take a big bowl and pour 2 cups dahi in it.
STEP-9:
Beat the dahi or curd properly. Add 2 cups water, salt and black salt in
it and mix well.
STEP-10: Add red chili powder, roasted cumin powder
and black pepper powder in it. Give it a good mix.
STEP-11: Add fried vadas init and keep it 15
minutes to soak the vadas into dahimix.
STEP-12: in the mean time, take a tadka pan and heat
1tbsp oil. Add cumin seeds, mustard seeds and hing in it.
STEP-13: Then add red chilies and curry leaves in
the tadka. Fry well.
STEP-14: pour the tadka or tempering on dahi phulki
and mix well.
STEP-15: The dish is ready to Serve hot or chilled.
